Beetroot Kurma
Beetroot is one vegetable that we are all very fornd of, but i have seen many of them do not prefer beetroot.We make curry(poriyal),put it in sambar,kootu,salad and of course the ABC juice.I always pick up a few beets while buying vegetables.After trying out the familiar dishes i wanted to make something new specially to go with chapathis because i really run out of choices of subzis for chathis often.I was searching the net and found this beetroot kurma in few blogs,then i tried it out immediately.It is actually kurma with lots of beets and it was yumm with the phulkas.

Split Green Moong Dal Recipe
Split green moong dal is a very simple and easy dal to make and it is very light on the stomac.Usually the north Indians make a Khichidi with this dal and rice when people are unwell and want to eat something light.I usually make the whole moong dal often but this one i am trying for the first time.

Kaddu Ki Subzi/Pumpkin subzi
I have always wondered if North Indians even cooked Pumpkin because i have always seen them making subzis with potatoes,cauliflower,peas,radish and capsicum and sometimes the big brinjal.I have noticed the Gujarathis cooking some vegetables like sweet potato,raw banana cluster beans etc.I recently found some recipes with pumkin.
I have some extra ounce of pumkin from my neighbour's farm so i fisnhed making one round of sambar kootu etc now i thought let me try out something new for chapathis and when i was looking for recipes i found this one.It was simple and easy to make(my style)so immediately tried it out.It is a flavourful subzi with fenugreek seeds and tangy and sweet with jaggery and mango powder.

Paneer Subz Shahi Korma/Paneer Vegetable Shahi Korma
Shahi(means Royal),yes,Shahi korma is a rich nawabi gravy with almonds,cashews and fresh cream.It is a mild and slightly sweet gravy.It goes well with Masala pooris,Nans,Kulchas and any pulao rice.
I am not a big fan of white gravy but when it is combined with a spicy bread or a pulao it is fine.My daughter loves white gravies a lot and whenever we go out for dinner we have a small fight over it becuase other than her no one eats that dish and finally we order a white gravy dish for her.

Paneer Tikka Masala
Paneer Tikka Masala is the yummy sidedish anyone would love with rotis,nans and kulchas.I made kulchas and Paneer tikka masala to go with it.It was like restaurant food at home for us because we usually make phulkas and light dals and subzis to go with it.I am sure all of you would love this yummy paneer subzi do give it a try!!!!!!!!

Pindi Chole/Pindi Channa
I have tasted this Pindi chole when i was little and i used to wonder why this channa is so different in colour and where the colour came from????Later when i started cooking i learnt from my North Indian friends that they put Tea leaves or Tea bags while boiling the channa.
Anyway it used to be very different from the normal channa i did not even realise it is made differently and callled different.Now i have started making with Bhaturas!!!!!
I like the tangy taste in this channa and it is best suitable for Bhaturas!!!It is a little dry so it can be had like a snack or a sundal along with some chopped onions and lemon juice.

Gobi Kaju Masala/Cauliflower and cashewnut Masala
Cauliflower is one of our favourite vegetable.Now because of its availability it is very fresh and good.It is a very good choice for making north Indian gravies and subzis to go with all types of Indian breads.I am sure the north Indians make a hell lot of them.I have tried a few and few south Indian gravies and subzis and Cauliflower "Sadam".
I have eaten this subzi in a restuarant it was called gobi kaju mawa curry.Cauliflower and cashewnuts in a rich cahew gravy and mawa or milk fat added to to it.I have tried to make a simpler version of that.You can add some creme or mawa to the gravy at the stage when you add curd.

Fajeto/Mango Khadi
I came to know of this mango khadi very recently.Even in gujarthi and rajasthani restaurants i have only tasted normal khadi.I saw it recently in a blog and i love mangoes so tried it immediately.It tasted yumm and it is even better than the normal khadi.It will go excellently well with palak roti and masala theplas.Last it tastes great with rice and ghee.

Vegetable Makhanwala
Vegetable Makhanwala is a rich creamy subzi with all the vegetables in a tomato gravy.It goes excellently well with all the Indian breads and Pulaos.I tried it only recently.It tastes like a restaurant subzi and all of us loved it at home.You can either add cashew nut paste or fresh creme to get the creaminess.I used cashew paste and it turned out really well and tasted great.If you have the mixed vegetables and cashew paste ready, it is quite easy to make. so you can even include in your party menus!!!!

Black Eyed Pea Masala/Lobia Curry
Black-eyed Pea or White Karamani ,is a simple yet tasty protein rich Dal or curry.I got exposed to a lot of Dals and Subzis only through my Maharashtrian friend from Singapore, when I used to live there. As a south Indian, I was not Exposed to a lot of North Indian food. For that matter, I learnt to make Phulkas only with the help of my friend. My mother used to make only Karamani Sundal during Navrathri or used to put it in the Karadayan Nombu adai. Here is a tasty recipe of the curry....

Bagara Baingan/Hyderabadi Bagara Baingan Recipe
I am posting this recipe for my blogging friend and I hope she likes it.I picked up the purple small brinjals y'day when i went vegetable shopping to make this subzi today. Bagara Baingan is a traditional hyderabadi Brinjal subzi.It is a great accompaniment for Biryani,pulao and Jeera pulao.In the traditional way the brinjals are deep fried and added to the gravy but i have not deep fried them.There is a smoky flavour to this dish traditionally but i have made it in a simple way!!!

Methi Matar Malai is a rich and creamy north Indian subzi(gravy).As the name says it is a curry with Methi leaves,green peas and cream.It goes well with all the Indian flat breads and pulao.It is a little different from the usual north Indian gravies(curries) which are tomato based and red in colour. Bombay Potato Curry
I think I am in a phase of making simple,easy,tasty,tangy subzi's these days.It is real hot summer and i am sure all of us want to spend as little time as possible in the kitchen.In the process i came across this subzi called Bombay potato curry or Bombay Bataka Recipe posted by Sia of Monsoon spice.I immediately gave it a try and it was yummy!!!To my surprise it is a no onion and no garlic recipe!!!!

Gujarati Dal
I have been wanting to post this recipe in a long time.Though it is very easy to make it took me so long to post it.It is simple Tur dal cooked in Gujarati style.They call it "khatta meeta" dal because it is a little sweet and spicy.It comes in really handy when you run out of ideas or vegetables!!!!Plain basmati rice with this dal with a dash of Ghee tastes heavenly!!!!

Mirchi Ka Salan
Mirchi Ka Salan is a Hyderabadi Subzi served usually with Hyderabadi Biryani.I feel it is a combination of north and south Indian taste.It is a little different from the usual north Indian subzis.It tastes good even with plain basmati rice.
My kids were hesitant to try this one because they think it is a subzi with chillies!!!!!later when they tried they quiet liked it.In the original recipe they use green chillies and they deep fry them!!!so if you want to you can try it too!!!!I would prefer the milder version so i have made this in the way below!!!!

Gujarati Kadhi
Gujarati Kadhi is a yogurt based sweet and spicy gravy.It is very simple and easy to make.It is usually served with rice and dal Khichidi.Kadhi is also made in different ways in different regions in India like rajastan and punjab.I like the Gujarati one the best.let us look at the recipe now.
