                                                            This is one more type of poricha kozhambu my mother makes.I have posted almost all of them.This one is with hot  "pepper and lime" that is the difference.You can make vazhaikkai curry for this as a combination.Now let us look at making it .

RASAM POWDER


You Will Need

  • One cup of Coriander seeds
  • Twenty Five Red chillies
  • Half a cup Tur Dal
  • Quarter cup Black pepper
  • Two Tbs of Cumin seeds
  • Few strands of Dried Curry leaves
How to Make It
1.Dry roast all the above ingredients one by one except cumin seeds.
2.Cool and make it in to a coarse powder and store it for few weeks.
3.Use it while making tomato rasam,paruppu rasam etc.

MASAL VADAI/Masal vada

Masal vadai is the most popular south Indian street food.You can find in most of the Tea shops in Tamil Nadu.When I Walk across the Tea shop where they are making these vadas the smell is so tempting.It sells so fast that it is just wrapped up in a newspaper and parceled.
It is a perfect evening snack with a cup of hot Tea on a rainy day or it could be a appetizer.

SPROUTS SANDWICH

                                                             I watched Sanjeev Kapoor make this in khana khazana in kids  special(Evening snack)It is quiet tasty(very much Indian)with green chutney and potato and chat masala.You can try it out and give me your feedback!!!


You will Need

  • Few tbs of Green gram sprouts
  • One boiled Potato
  • Half tsp of Chat masala
  • Few tsp of Green chutney
  • Few slices of Tomato
  • One Onion chopped
  • Salt to Taste
How you Make It
1.Mash the boiled potato add some chat masala,few tbs of green gram sprouts,chopped onions,and some salt
2.Spread green chutney on one side and spread the sprouts and potato mixture on one side.place sliced tomato on top close and grill it.
3.Serve with Tomato ketchup.


Notes
  • To make green chutney wash and grind half a bunch of coriander leaves with one green chilli and salt.
  • You can add as much sprouts as you like as it is healthy and very crunchy.Potato is just to bind all of them.

Sponge Cake

                                                           My daughter baked her first cake today and for her age it turned out too good.It is a simple and easy recipe.Have a look!!

You will Need

  • Three eggs
  • Flour
  • Sugar
  • One tsp of Baking powder
  • One tsp of Vanilla essence
  •  Butter
How you Make it
1.Weigh the eggs and take the same weight of butter,sugar and flour.
2.Sieve the flour and the baking powder.Melt the butter and mix it with Sugar.
3.Add the eggs one by one and continue beating the mixture.
4..Add the flour,vanilla essence and mix it well till you get a smooth mixture.
5.Cover the baking dish with aluminium foil and grease it well with butter.
6.Pour the mixture into the tray and bake it for 25-30 minutes.

Dangar Pachidi

                                                         This is a typical Tanjore style recipe popularly called "dangar pachidi".It is quiet simple to make and it is an accompaniment with south indian gravies like sambar,vethakozhmbu etc.The speciality of this one is the aroma when you fry the dal till golden brown.


You will Need

  • 2tbs of Urad Dal
  • few Red chillies
  • A pinch of Asafoetida
  • Salt to taste
  • Beaten curds
  • few Coriander leaves
  • one tsp of Gingelly oil
How you make It

1.Fry the urad dal till golden brown in a little bit of gingelly oil with few red chillies.
2.Cool it and powder it in the mixer.Add salt,asafoetida and mix with curds.
3.Garnish with coriander leaves and serve as an accompaniment for rice and gravies.

Kathirikkai Podi Potta Curry


You will Need

  • 250gms of Purple Brinjal
  • Salt to taste
  • 1/4tsp of Turmeric powder
  • few tsp of Oil
  • 1tsp of Mustard seeds
  • A pinch of Asafoetida

To Roast and Grind

  • One tsp of Gingelly oil
  • One tsp of Channa Dal
  • One tsp of Coriander Seeds
  • few Red chillies
  • One Tbs of scraped Coconut
How you Make it

1.Heat a pan add a tsp of gingelly oil fry the ingredients above and cool.
2.Heat Oil in the same pan crackle mustard seeds and add cut(lenghtwise) brinjal pieces.
3.Add Turmeric powder,Salt and close it and cook till done.
4.Powder(coarse) the Roasted ingredients meanwhile.
5.Add the powder,asafoetida and some curry leaves and fry.

Suggestions

  • Try this Recipe with Potatoes and Raw Banana.It is good with sambhar sadam.

Aavakkai Pickle


You will Need

  • Five round and sour mangoes
  • One cup chili Powder
  • One cup Salt
  • 1/4 cup Mustard seeds powder
  • 1/4 cup Turmeric powder
  • Two tbs of Kabuli Channa
  • One cup of Gingelly Oil
How To Make It

1.Wash and Clean the Mangoes.Cut it with a Real big knife so that it cuts through the Seeds.
Cut it like shown in the picture with part of the seed with the mango.Allow the pieces to dry for an hour.
2.Keep a suitable size pickle jar washed and dried.Make a paste with the oil and all the powders.
soak mango pieces in the paste one by one and put in into the jar.
3.Throw in the Fenugreek seeds and kabuli Channa(optional)in to the jar mix well keep it air tight for a day.
From then open the jar everyday and keep mixing it well for few days till the mangoes gets soaked and you can refrigerate after few days.

Notes

  • If you desire add some Asafoetida Powder.
  • You can reduce the amount of Mustard powder if required.
  • Now a days pickles do not last for long if kept outside so refrigerate after few days.


Tomato Sevai


You will Need

  • One Packet of MTR Sevai
  • Three to four Tomatoes
  • Three Onions
  • Two Green chillies
  • Coriander leaves for Garnishing
  • Salt to taste
  • half a tsp of Turmeric powder
  • half a tsp of garam masala powder
To Temper
  • Few tbs of cooking oil
  • One tbs of Fennel seeds
  • Four cloves
  • Two cardamoms
  • Small piece of Cinnamon stick
How To Make It
  1. Boil the Sevai or Rice sticks in hot water for three minutes drain and cool it.
  2. Chop onions,tomatoes,green chillies slightly lengthwise.
  3. Heat oil in a pan and temper the things given above and saute the Onions.
  4. Add tomatoes,green chillies,salt and Turmeric powder.
  5. Saute till the water evaporates and until it becomes thick.
  6. Add garam masala powder,stir and switch off the stove and cool it.
  7. Mix with the cooked sevai and garnish with Coriander leaves.
  8. Serve with any type of Raita.
Notes
This is my own recipe.The traditional recipe is temper with mustard seeds and Channa Dal and fry the tomatoes till it thickens and mix it with the boiled sevai.

Thengai Thogayal|Coconut Thogayal

Thogayals are spicy and thick chutneys usually had with hot rice or idlis and dosas.This thogayal is usually made on the days when they made more kozhmbu in our house.Though nowadays we do not make thengai thogayal  that often we cannot forget the lingering taste  of it so i try to  make it once in a while. 
   
                                                               
You will Need

  • Half a Coconut scraped
  • 2tbs of Urad dal or Ulutham paruppu
  • 4-6 dry Red chillies
  • A generous pinch of Asafoetida
  • A small piece of Tamarind
  • Salt to taste
  • 1 tbs of  Gingelly oil.
How to

1.Heat oil in a pan and fry the urad dal and red chillies till golden brown and cool it.
2.Grind the urad dal,red chillies,salt,tamarind and asafoetida first.
3. Add the scraped coconut and grind to a coarse paste.
4.Have it with hot rice and gingelly oil on top of it and may be with some more kozhambu.

Notes
  • You grind the dal and the chillies first so that the spices spreads evenly.
  • Instead of dry tamarind you can use tamarind paste.

Banana Dosa

                                                                 This is a different kind of Sweet dosa made with ripe Bananas,some rice flour,all purpose flour little bit of milk and cardamom powder.We have had this in a nearby restaurant and we liked it so much i  could not resist asking the chef for the  Recipe.Now let us see how we make this.




You will Need

  • One Morris ripe Banana
  • Two Tbs of Rice flour
  • One Tbs of Maida
  • Pinch of Cardamom powder
  • Milk for Binding
  • Ghee for cooking
  • Few Raisins
  • Few Cashewnuts


To Make
1.Gather all the ingredients in a tall bowl.
2.Blend it with the hand beater.Add milk for binding according to your consistency.
3.Heat a non stick pan pour the dough into small dosas and cook till golden brown on both sides.

Isn't that quite simple?

Juice for Sinus

                                                                  This is a fruit and vegetable juice my homeopath doctor recommended while treating me for sinus.I always like to get treated naturally so i thought i will share this so that someone will benefit who also thinks like me.Have this juice along with your breakfast and it improves your immunity(that is what my Dr said).Hopefully  it works!!!!

You will Require

  • One carrot
  • One Tomato
  • Hand full of Pomegranate
  • A Slice of Beet root
  • Few drops of Lime Juice
  • Honey or Sugar for sweetness

How To Make It
1.Chop all the fruits and vegetables in to big pieces.Shell the pomegranates.
2.Blend it in the mixer.

3.Strain it and add lime juice and sugar or honey and mix well.
4.Mix well and serve.

Sprouts and Vegetable Khichidi

                                                                     This dish is my own imagination i would say.I always think of healthier options in all the meals.I try to bring in as much healthy food as possible in each meal.I made this khichidi for dinner one day when i was feeling lazy to make roti.I had a ready made sprouts and all the vegetables so i thought i would mix up everything and make a khichidi."It tasted quiet good".You can try and let me know.

Ingredients

Rice
11/2cup
Sprouts
3/4cup
Onion
1no
Tomato
2no
Carrot
1no
Peas
Half a cup
Ginger garlic paste
1tsp
Turmeric powder
1/4tsp
Chilli powder
1/2tsp
Coriander powder
1/4tsp
Cumin powder
1/4tsp
Garam masala powder
1tsp
Oil
3tsp
Cumin seeds
1tbs
Salt
2tsp

Method
1.Chop all the vegetables into small blocks.
2.Heat oil in a pan splutter cumin seeds and fry onions.
3.Add tomatoes,ginger garlic paste and salt.
4.Once tomatoes gets cooked add all the powders.
5.Add the other vegetables,washed rice and sprouts.
6.Add enough water and pour it into the rice cooker.
7.Serve with khadi or Gujarati sweet pickle.

Suggestions

  • Adjust the measurements of masala's according to your taste.
  • Include or exclude vegetables according to your taste.
  • Add some more salt while rice is getting cooked.
  • Add ghee while serving for better taste.
