Ribbon Pakoda

Ribbon/Nada/Tape Pakoda as it is called in different names because of its lengthy ribbon-like shape. It is a spicy type of  Thenkuzhal, made during diwali in most of the South Indian homes. It is very easy to make that it can be made anytime of the year.It tastes great with a cup of coffee that you will not be able to resist especially on a rainy day.
I always look for Meenakshi amma's cook book for my traditional recipes.I just followed her recipe in "Samaithu Par". Since I made it during a regular but rainy day, I just added crushed garlic for the flavour which is purely optional.

You will Need
  • Two cups of Gram flour
  • One cup of Rice flour
  • Salt to taste
  • One-two tsp of Chilli powder
  • Two tbs of melted Butter
  • 1/4 tsp of Asafoetida
  • Oil to deep fry
How to
  • Mix rice flour, gram flour, chilli powder, salt, melted butter and asafoetida powder in a large bowl.If you are adding crushed garlic add at this stage and avoid asafoetida.

  •  Add water and make it into a soft dough.Check for salt and adjust at this point.

  •  Fill it up in the murukku maker with the ribbon plate inside it.

  • Heat oil in a deep frying pan and when it is hot press the murukku maker in circular motion till the ribbon forms one layer.Deep fry till golden brown, flip it over and drain in a paper towel. Repeat for the rest of the dough.Once it is done, the bubbles in oil will disappear and the sizzling noise will stop.

  • After making four or five check for the dough in the murukku maker and refill it again and repeat.

If you are making large quantity, mix the flour in small quantities and make in batches. You can adjust the salt and chilli this way.
Enjoy with a cup of coffee !
