Akkaravadisal
Akkaravadisal is a popular Iyengar sweet.You must have tasted it in a lot of vaishnav temples as prasadam.It is similar to sarkarai pongal except that it is cooked in water for sarkarai pongal whereas the Rice and Dal are cooked in milk for Akkaravadisal.In the original recipe, it is sweetened with Jaggery while I have used Sugar. You can use either one.

Payatham Paruppu Payasam
Payatham Paruppu or Paasi Paruppu payasam(yellow Moong dal) is the easiest paruppu payasam to make.Today being Friday of Tamil Aadi Masam I made this Payasam. My daughter loves payasam with Jaggery.This payasam is made in most of the festivals at home.It is also called "Payatham Kanji"and made on fasting days especially on sivarathri.(while making payatham kanji ususally they do not add cardamom powder)
I have added milk to this payasam you can either add milk or coconut milk to it.If you are adding coconut milk do not heat it too much after adding the coconut milk.

Badam Kheer/Almond Kheer
My mother also used to make it in bulk and store in the refrigerator during navrathri(i do the same).It is one of the tasty payasam that i like.I like it cold and hot, it tastes very good both ways.It is perfect drink to offer during festivals.

Paal Payasam with Condensed Milk
Recently I had this Paal Payasam (milk Kheer) in a wedding, it was soo yummy ! I wanted to have it again and was waiting for an opportunity .Today, being Ugadi, my neighbors had invited all of us for lunch. I wanted to make a sweet and take it to her house.I made this paal payasam in kerela style - totally milky, with no other aromatic spices.
There are two ways of making it. First, one where you reduce the milk to half by heating it and then adding sugar.The second one is where you reduce the milk a little and then adding condensed milk which makes it thicker and tastier.When you are using condensed milk there is no need to add sugar.

Semolina Pudding/Rawa Payasam
Wish you all a Very Happy New Year.I was planning to make a cake for the new years but was not able to because of time constraint.I thought let me start the new year with a little sweet and after seeing the lovely posts of different kinds of payasam(pudding,kheer)in all the other blogs i thought let me make this one at least. It was very yummy yet simple and fast to make!!

Elanir Payasam
Elanir payasam is the most easiest payasam to make.There is not much cooking involved while making this, I learnt this from a friend from chettinad.Since it is summer time i thought this would be ideal to post this for the fact that it is a sweet as well as light and cooling.There is no ghee or extra sugar so you can really binge on it!!!
Ingredients
Milk | 250ml |
Tender coconut | 1 |
sugar | 8tsp |
1.Boil milk till the milk thickens a bit and cool it.Add the sugar.
2.When it has really cool down add water of the tender cocnut and refrigerate for few hours and chop the tender coconut in to pieces.
3.Just before serving put the tender cocnut pieces in the serving bowl and add the payasam to it.

Pal payasam(milk kheer)

Ingredients
- Basmati rice One handful
- Milk One litre
- Sugar One cup
- Saffron(optional) Few strands
- Ghee One spoon
Method
2. Pour one litre of milk and allow it to boil in a slow fire.
3.Check if the rice is cooked and slow cook till the milk reduces to half.
4.Add sugar and boil further so that sugar gets dissolved and payasam becomes thick.
5.Add saffron dissloved in hot milk and elaichi powder(optional) and serve hot.
Tips
Use a thick bottmed and tall vessel so that milk does not overflow.
You can add cardamom powder,saffron or nutmeg powder to your taste.
You can also add condensed milk and make it faster if you do not have time.
