Mexican Rice

Mexican rice is a simple tomato and lemon flavored rice with kidney beans.sometimes it is also called Spanish rice in which they use saffron for colour instead of tomatoes fully.I have tried to make it with the best ingredients available in my house. You can either use tomato puree made at home or the canned tomato puree which makes it easier and faster to cook!!

We are tasting a lot of Kerala Dishes these days because my friend is a Keralite and she is a superb cook.We have been trying a lot of dihses but few of them i would like to try out and blog it.One of them is this Banana Fritters or popular "Pazham Pori".It is a famous tea time snack in kerela apparently.
She made this and bought it when we were all going for a movie together in the same car.we were all so hungry and the fritters got over in few seconds. It reminds me of the appam we make with wheat flour, jaggery and banana but this one has its uniquness and taste.

Pizzadilla(Quesidilla Pizza)

Pizzadillas  are nothing but simple form of pizza done on the stove top with Tortillas. It is very similar to quesidillas which has a mexican filling where as pizzadilla is more like a thin pizza with pizza toppings.  I thought let me try out with left over chapathis or rotis which is more healthy.                                                                 After trying out bread pizza and similar pizza flavoured recipes i thought why dont i try this one with left over rotis.Yes you can create a delicious snack with leftover chapathis or rotis called pizzadilla  (quesidilla pizza). It is incredibly easy to make and tastes awesome!I am sure your kids will love it and your rotis will not go waste.

Fried Rice/Indo Chinese

The best way to finish your old rice while satisfying a craving for restaurant-style Indo chinese food is to make this "Fried Rice".Yes, old rice best suits this recipe because it has to be tossed in high flame along with vegetables and it should withstand the tossing.
My daughter is very fond of this Fried Rice and she orders it most of the time when we go out.I never knew until recently that it tates best with old rice. If I had known, I would have made it more often

Thin Crust Veggie Pizza

Thin Crust pizzas are the 'in thing' now.Even my kids prefer it to a thick and cheesy pizza. We have taken to it after trying it out in restaurants like "Little Italy" and "Tuscana". I'm a fan of pizzas with Pineapple on it. Of course you can try whatever topping you want but the base recipe remains the same.

Sabudana Khichidi

Sabudana Khichidi is made from Sago(we call it Javarisi). It is made during navrathri days and during fasting days.It is very popular in Maharashtra. The addition of Peanuts and potato makes it a whole and filling meal while fasting.
Once in a while I make it for breakfast in my house because i don't really observe any fasting. My kids are not very fond of sago because of its gooey nature.I have made this khichidi with two different types of sago one is big which requires more soaking time and the other smaller one needs only half an hour soaking time.

Vegetable Momos

I was not aware of Momos when I was a child, but the recent explosion of International cusines has exposed all of us to a lot of cuisines. Though Momos  is not one of my favourites, once in a while I would like to try these new recipes. When I was out for a sale at a hotel, they were selling freshly prepared momos at the entrance and I picked up a few for the kids. That's when I thought I should give it a try and it came out pretty well!
Momos are flour dumplings filled with vegetables and steamed. It is usually served with chilli garlic sauce or dip.It is very easy to make you can soak a few chillies in vinegar for ten minutes then grind it along with a few pods of garlic and add some salt and honey.I added one tomato too, which is purely optional.

Calzone

Calzone originates from Italy. It is made of Ingredients similar to pizza folded over and shaped like a crescent.Usually these are stuffed with Tomatoes and mozzarella but i just modified according to my kids taste.
My daughter wanted to have Pizza today so i thought being Friday  let me try out something new and that tastes like pizza and while i was browsing found this recipe (I tried from US masala blog)gave it a try and made it little more healthy by adding a lot of wheat flour. My kids were extremely thrilled to see such a new recipe and that tasted like Pizza which they love anyways!!!!
