Vegetable Jalfrezi is a North Indian Dry Curry(stir fry).It is a very colourful and simple subzi that goes well with all the Indian Breads.Since it is a dry one it is always followed by some kind of simple dal in my house.
The one thing special about this curry is you add pounded fresh coriander seeds to the subzi.It gives a great aroma and taste to the vegetables.

You will Need
- Diced Vegetables(2 cups)
- Two Onions
- Two Tomatoes
- One tbs of Oil
- One tsp of Cumin seeds
- One tsp of Ginger garlic paste
- One tsp of Coriander seeds
- 1/4tsp of Turmeric powder
- 1/2tsp of Red Chilli powder
- 1 tsp of Garam masala powder
- Salt to taste
- Two tbs of Coriander leaves
How to
- Blanch the diced vegetables in hot water.dice vegetables like cauliflower,carrots,beans and peas(you can add a few more of your choice).Put it in boiling water allow it to boil for two minutes with salt.
- Drain it and quickly wash it in cold water so that it retains colour and at the same time it is cooked.
- Dry roast the coriander seeds and powder them.
- Heat one tbs of Oil and crackle cumin seeds.Add diced onions and fry till light brown then add ginger garlc paste and fry further.
- Add diced tomatoes,salt,turmeric powder,chilli powder,garam masala powder and fry till tomatoes are mushy.
- Add blanched vegetables and diced capsicum and fry further.sprinkle water if the subzi is dry.
- Add the powdered coriander seeds and chopped coriander leaves and give it a good stir and transfer into a bowl.
Do not overcook the capsicum.let it be crisp and retain the colour.
