ALOO DUM



You will Need
  • Twenty baby potatoes
  • Two Onions
  • One Tomato
  • Half a tsp Turmeric powder
  • One and half tsp Salt
  • Half a tsp Chilli powder
  • Half a tsp Garam masala powder
  • Quarter  tsp Coriander powder
  • Quarter  tsp Cumin powder
  • Half a cup curds
  • One tsp of Ginger Garlic paste
To Roast and Grind
  • One Onion
  • Ten Cashew nuts
  • One tsp Fennel seeds
  • Two Cloves
  • Two cardamoms
To Temper
  • Few Tbs of Oil
  • One Bay leaf
  • One cinnamon stick

How You Make It
1.Boil the potatoes in pressure cooker for two whistles,peel off the skin and poke with a fork on all sides.Heat a little oil in a pan and fry the potatoes till light brown.
2.Heat a pan gently fry the things given under roast and grind,cool and grind to a smooth paste.


3.Chop rest of the onion.Heat oil in a pan temper with the things given under to temper.

4.Fry onions till brown,add the tomatoes,salt,turmeric,chilli,coriander,cumin and finally garam masala powder and cook till tomatoes are mushy.
5.Add the ground paste and ginger garlic paste and fry till the raw smell goes.
6.Add curds and keep stirring.
7.Add the potatoes and some water if required and  simmer it for few minutes

8.Garnish with coriander leaves and serve with hot hot rotis.

Suggestions
  • Boil the potatoes peel the skin and saute them for five minutes in some oil or if you wish could deep fry them.
