I have always wondered if North Indians even cooked Pumpkin because i have always seen them making subzis with potatoes,cauliflower,peas,radish and capsicum and sometimes the big brinjal.I have noticed the Gujarathis cooking some vegetables like sweet potato,raw banana cluster beans etc.I recently found some recipes with pumkin.
I have some extra ounce of pumkin from my neighbour's farm so i fisnhed making one round of sambar kootu etc now i thought let me try out something new for chapathis and when i was looking for recipes i found this one.It was simple and easy to make(my style)so immediately tried it out.It is a flavourful subzi with fenugreek seeds and tangy and sweet with jaggery and mango powder.

How to
1.Peel the skin and chop the pumkin in to thin pieces like in the picture.You can cut them in to blocks if you want to also.
2.Heat oil in a pan add fenugreek seeds and let it brown then add asafoetida,ginger pieces, green chillies and saute for few seconds.
3.Add turmeric powder,red chilli powder and saute for few seconds more.
4.Add the cut pumkin pieces,salt and saute for a minute then add a little water and cover and cook for 5 minutes.It gets cooked easily.
5.Once the vegetable is cooked add jaggery and amchur powder and mix well.
6.Garnish with chopped coriander leaves.
Enjoy the subzi with some hot phulkas or methi theplas os pooris.

- 1 tbs Oil
- 1/2 tsp Fenugreek seeds
- A pinch of Asafoetida
- 1 tsp of Chopped Ginger
- 1 chopped Green Chilli
- A pinch of Turmeric powder
- 1/2 tsp Red Chilli powder
- 1 tsp Powdered Jaggery
- 1/2 tsp Aamchur or Mango powder
- 1 tsp chopped Coriander leaves
- Salt to taste.

Notes
- You can add some chopped onions and tomatoes in the begining to add more taste and volume to the subzi.
- You can add some garam masala powder also for some extra flavour.
- Do not miss out on fenugreek seeds,ginger,amchur powder and the jaggery.
