Mixed Vegetable curry/Accompaniment for South Indian Gravy

When i have some vegetables left over after making kootu i always end up making this vegetable curry for sambar or rasam.I almost use all the vegetables in the mixed vegetable kootu except the chow chow or Banglore Kathrikkai. This curry is very colourful and tasty and you can either make it with or without coconut.

You will Need
  • 200 gms of Cabbage
  • One Carrot
  • 1/2 Cup Peas
  • One tsp Oil
  • One tsp Mustard Seeds
  • 1/2 tsp Urad dal
  • A pinch of Turmeric powder
  • 1/2 tsp Red Chilli powder
  • Salt to taste

How to
1.Wash and Dice all the vegetables .
2.Heat oil in a pan crackle mustard seeds, add urad dal and a red chilli and allow the dal to brown a little.
3.Add the chopped vegetables give it a mix and add salt, chilli powder and turmeric powder mix again and cover and cook for five minutes in medium flame.
4.Open the lid check if the vegetables are cooked and saute for few minutes until all the water evaporates and transfer in to a serving dish.
Enjoy as an accompaniment for sambar or rasam or vatha kozhambu and hot rice.
