Millet Idli

                                                            Looks like Millets are the "In thing" now a days. I have seen so many millet recipes recently and these products are found plenty in the super market. So, I thought let's start with Idli and Dosa first.This is my first attempt in making these recipes.You can check out this website for the benefits of milletshttp://suryaecolife.in/nourish-protect/benefits-millets/
Benefits of Little millet includes

  • Chama / Samai is rich in phyto-chemicals and it has excellent antioxidant properties.
  • Its Dietary fiber protects against hyperglycemia.
  • It reduces cholesterol and helps to digestion.
  • Kutki / Samai / Chama contains nearly 2.5 times minerals and nearly 38 times fiber and nearly 13 times Iron than Rice. 
  • Kutki / Samai / Chama  contains nearly 6.3 times fiber and nearly 1.8 times Iron than Wheat. 
  • Kutki / Samai / Chama  contains lesser amount of carbohydrates than Wheat and rice and has abundant quantities of Thiamin (Vitamin B1) which is not present in Rice and Wheat.




You will Need
  • Four cups of Little millet        
  • One cup whole Urad dal
  • Salt to taste
  • Few tsp of Gingelly oil
  • Half tsp Methi Seeds









How to
1.Wash and soak millet and urad dal seperately.

2.Grind them seperately in a wet grinder or a mixer adding enough water for urad dal and little water for the millet.It does not take much water.
3.Combine both,add salt and mix well and leave it to ferment for 8 hours.
Once it ferments and rises in quantity, mix it gently.
Pour it in greased idli plates and steam it for 10 to 15 minutes.
Enjoy the idlis when it is hot with any chutney or sambar!!!!!

Notes

  • You can add few methi seeds while grinding for better taste.
  • You can grind either in a mixer or grinder, but a wet grinder is better.
  • You can try the same recipe with Kuthiraivali,sama and varagu millets!!!

Great recipe. Always your side dish are sema !! What is that ? Thengai chutney & what is the other one ? Pls pls share the recipe for that red chutney !! Thanks in advance.
