Vegetable Makhanwala is a rich creamy subzi with all the vegetables in a tomato gravy.It goes excellently well with all the Indian breads and Pulaos.I tried it only recently.It tastes like a restaurant subzi and all of us loved it at home.You can either add cashew nut paste or fresh creme to get the creaminess.I used cashew paste and it turned out really well and tasted great.If you have the mixed vegetables and cashew paste ready, it is quite easy to make. so you can even include in your party menus!!!!
You will Need
1.Chop all the vegetables either lengthy or diamond shaped, however you like.Soak the cashew nuts in hot water and grind it in to a smooth paste and keep it aside.

- Two to three Onions
- Three Tomatoes
- One cup Mixed Vegetables
- Three pods of Garlic
- A small piece of Ginger
- One tbs of Cashew nut paste
- Two tbs of Butter
- 1/4 tsp of Turmeric powder
- 1/2 tsp of Chili powder
- One tsp of Garam masala Powder
- One tbs of Kasoori methi(dried)
- One tbs Chopped Coriander Leaves
- 1/4 cup Milk(if required).

2.Boil them until crisp and keep aside.Add a little salt while boiling.
3.Saute the onion and tomatoes with ginger and garlic,allow it to cool and puree it.
4.Heat butter in a pan and crackle cumin seeds.
5.Pour the puree and cook till oil separates.
6.Add salt,chilli powder,turmeric powder and garam masala powder.
7.Add the cashew nut paste and mix well.
8.Add the boiled vegetables and if it is too thick add some milk.
9.Mix well and add Kasoori methi leaves.
10.Finally garnish with some coriander leaves and serve with any pulao rice or any Indian bread.
Enjoy the creamy and yummy subzi.
Notes
- You can use cauliflower,carrots,beans,peas and baby corn as mixed vegetables.
- You can use fresh creme instead of cashew nut paste.
- Addition of milk is optional depending upon the thickness of the subzi.
- Adding Kasoori methi gives a good flavour to the subzi.
- You can use ginger garlic paste instead of separate ingredients.
