Poondu Kozhambu/Garlic Kozhambu

                                                                         Poondu Kozhambu is a very common Tamarind Gravy in any Tamil home.Without any doubt, it is most people's favorite too! All of us love it in our house too ! There are so many ways of making this gravy but mine is quite simple. I make it on Sundays with a lot of garlic in it and make it with more of onions on weekdays. I am posting this especially for a friend !!
It tastes great along with hot rice and some gingelly oil and a roasted papad to go with it.It is easy to prepare and it goes well with idli or dosa too!!!



You will Need
  • One cup of Peeled Shallots
  • Quarter cup peeled Garlic pods
  • One large lemon sized ball of Tamarind
  • 3 Tsp  of Sambhar powder
  • Salt to taste
  • One tsp of Jaggery
  • A pinch of Turmeric powder
To Temper
  • Two tbs of Gingelly Oil
  • One tsp Mustard seeds
  • Half a tsp Fenugreek seeds
  • One tsp Tur dhal
  • Few Curry Leaves
  • Few Red chillies

How to
  • Soak Tamarind in hot water for half an hour and extract thick pulp three times.




  •  Heat oil in a sauce pan crackle mustard seeds and the items given under "to Temper".


  • Add shallots and garlic and fry for two to three minutes.Add turmeric and sambhar powder and fry for a minute. 


  • Pour the tamarind water and  jaggery powder,salt and let it thicken.If you don't prefer jaggery you can avoid it.


Enjoy it with some hot rice gingelly oil and a roasted papad or any south indian vegetable to go with.



  • you can use Vathakozhambu podi or powder too instead of sambhar powder.

Hi,
Nice recipe. When I try, the tamarind is way off.Can you pl measure in tablespoon, of tamarind paste (thick or thin) that is available in market ready made.
That would be big help.

For this recipe it would be best if you use tamarind extract made at home.In case you are using paste take about 2tbs and add water.for the gravy to thicken use about one tbs of rice flour dissolved in a little water and pour it in the gravy and boil for two minutes or until it thickens.
