Pindi Chole/Pindi Channa

                                                               I have tasted this Pindi chole when i was little and i used to wonder why this channa is so different in colour and where the colour came from????Later when i started cooking i learnt from my North Indian friends that they put Tea leaves or Tea bags while boiling the channa.
Anyway it used to be very different from the normal channa i did not even realise it is made differently and callled different.Now i have started making with Bhaturas!!!!!
I like the tangy taste in this channa and it is best suitable for Bhaturas!!!It is a little dry so it can be had like a snack or a sundal along with some chopped onions and lemon juice.



You will Need
  • 200gms of white Kabuli channa
  • One tea Bag or one tsp Tea Leaves
  • Salt to taste
  • Half tsp Turmeric powder
  • One tsp Chilli powder
  • One tsp Aamchur powder
  • Lemon Juice
  • Onion Wedges
  • Two tbs of Oil
  • To Roast and powder
  • One tbs of Anardhana seeds
  • One tsp Corinader seeds
  • One tsp Shahi Jeera
  • Half tsp Black pepper
  • Half tsp Cumin seeds
  • One fourth tsp Ajwain
  • One inch Cinnamon stick
  • Two Black Cardamom
  • Three to for Cloves
How to
1.Soak the channa overnight or 7-8 hours.
2.Add a tea bag or one tsp tea leaves tied in a cloth and pressure cook it for 20 minutes.(lower the flame after three whistles)
3.Gather all the ingredients for roast and grind.
4.Dry roast them in low flame and allow it to cool.
5.Powder it in a mixer.
6.Heat oil in a pan and fry ginger garlic paste for few seconds.
7.Add the ground powder and fry in oil for few more seconds.
8.Add turmeric powder,chilli powder,salt and dry mango powder or aamchur.
9.Let everything come together for few more seconds let the stove be on low flame.
10.Add the channa along with the boiled water and allow it to boil for few minutes.
11.Close with the lid and allow it to boil for few minutes
12.Let it thicken.
Sprinkle some coriander leaves,drizzle some lemon juice and enjoy with some hot Bhaturas!!!!
Notes

  • Adding lemon juice adds to the taste so do not skip it.
  • If you do not have aamchur powder add a little tamarind extract instead.
  • Serve with Onion and tomato wedges.

You can get anardhana powder ready-made in most super markets.
