Drumstick Soup/Murungakkai Soup

I have been looking for iron rich recipes these days and in the process found this soup.I have tasted a light version of this soup in some restaurants but never tried it.I decided to make this today and going through a lot of recipes on various blogs.Ultimately i made my own version of it.While picking drumsticks for a soup let them be little thick and pulpy.

You will Need(to make One large bowl of soup)

  • 3-4 Drumsticks
  • One Small Onion
  • Few Drumstick leaves
  • Salt to taste
  • Pepper to taste
  • Few drops of Lemon juice
  • One tsp of Butter
1.Wash and Chop the drumsticks into lengthy pieces and boil it in water.

2.Drain the water and scoop out the fleshy part, collect it in a bowl.
3.You can reserve a few chunky parts for garnishing.
4.Heat butter in a sauce pan and fry the finely chopped onion and add drumstick leaves.
5.Add water and allow it to boil.
6.Meanwhile make a puree out of the drumstick pulp.
7.Pour it in to the boiling pan.
8.Adjust the consistency according to your preference by adding water.
9.Add pepper powder and salt.
10.Add few drops of lemon juice and switch off the stove.

Enjoy it as a appetizer!!!

Notes

  • You can adjust the consistency according to your taste. You can add some milk for a filling soup.
  • You can add some crushed garlic while frying the onions if you prefer.
  • You can avoid the lemon juice if you prefer.
