Bhel Puri

                                                             Bhel Puri is the king of chat recipes according to me.All the other chat recipes are derived from this main chat.Though the chat recipes originated in the north of India now it is popular all over India and even outside India. The calcutta version of bhel puri is called 'Jhaal Muri',mysore version is called 'Churmuri' and a dry bhelpuri is called 'Bhadang' or 'sukka Bhel'
  Bhel puri is made with puffed rice,sev,potatoes,onions,chaat masala and the two types of chutneys.One is a sweet and tangy chutney with dates,tamarind and jaggery and the other is green chutney with coriander leaves,green chillies and lime juice.



You will Need





  • Two cups of Puffed rice
  • Half cup Sev
  • Papdi 8 broken
  • One Diced Boiled Potato
  • One Onion Finely chopped
  • One Tomato finely chopped
  • Coriander Leaves
  • Chaat masala powder
  • Red chilli powder
  • Lemon juice from half a lemon
How to
  • First of all you need two types of chutneys to prepare any chat.One is the green chutney.
Green Chutney

  • Wash the coriander leaves well and grind it along with some salt,two green chilies,lemon juice and  some chaat masala powder.You can add some Mint leaves also if you prefer.
Sweet Chutney

  • Soak about 20 dates in hot water.soak lemon sized ball of tamarind in hot water.Grind the dates in to a paste.Extract a thick pulp from the soaked tamarind.combine both add a little water if required and heat it.Add some powdered jaggery and chilli powder and allow it to thicken and raw smell of the tamarind goes.Dry roast one tbs of cumin seeds powder and add it to the sweet chutney at the end.when it becomes a saucy consistency switch off,allow it to cool.store in a dry container and use when required.

  • The papadi is small flat puris which you get in shops.you can buy the papdis and sev ready made.
  • Take One tbs of green chutney,one tbs of sweet chutney some chaat masala and some chilli powder(sorry i forgot to put before taking the picture)in a wide bowl.


  • Add,chopped onions,tomatoes,cubed boiled potato,puffed rice ,coriander leaves and mix well.



  • Finally add some broken puris or papdi's ,sev,sprinkle some chat masala and lemon juice and give a quick stir and serve immediately





Notes

  • Adjust the chutney quantities according to your taste.
  • Serve immediately once you mix the bhel puri as the puffed rice might get soggy after a while.
  • You can add shredded carrots,chopped raw mango pieces and pomegranates at the end according to your taste and availability.

Thanks. Loves this chat very much. haven't tried till now by myself. is there a way to make this chat a little bit gravy like. what about adding a little bit of boiled chickpeas or peas ?
