Badam Halwa

Badam Halwa is a rich and delicious sweet made with badam paste, sugar with saffron flavour. The saffron is the main flavour for this halwa but if you like you can add a pinch of cardamom powder but i prefer only saffron flavour. We all love this halwa.I make badam kheer quiet often but make this badam halwa not oftern but definetly during Diwali. It is very easy to make if you have the badams soaked and peeled.

You will Need
  • One cup of Badam Paste
  • One to one and half of Sugar
  • Half a cup Ghee
  • Few Saffron strands
  • Half a cup of Milk
How To
1.Soak almonds in hot water for half an hour or few hours in normal water peel and grind to a smooth paste with milk or even water will do.

2.Meanwhile soak few strands of saffron in warm milk.
3.In a nonstick pan combine sugar and almond paste and heat on slow fire.
4.In few minutes the sugar will dissolve.
5.After few minutes add the saffron soaked with milk to the paste.
6.Continue to heat for few minutes and keep stirring continously.
7.Add the ghee and keep stirring.
8.Once the ghee is absorbed and the paste leaves the pan switch off the stove.

Notes
  • You can add edible camphor or elaichi powder for flavour
  • You can grind the badam with water or milk.
  • Always cook in slow to medium flame as it will splutter.
  • The halwa will thicken after it cools down so you don't have to wait till it thickens on the stove.
  • Saffron gives a good flavour to the halwa so do not avoid it.
  • You can store it outside for few days and for a week in the refrigerator.
