Pan Roasted Baby Potatoes

                                                                 Potatoes the universal favorite vegetable is enjoyed in every form,shape and size.These pan fried  baby potatoes are a perfect accompaniment for any other south indian  gravies like sambar,rasam and some steaming hot rice!!

You will Need
  • 350gms of Baby Potatoes
  • 1/4Tsp of Turmeric Powder
  • 1/2Tsp Of Chilli Powder
  • Salt to Taste
  • 4 Tbs of Oil
  • A Pinch of Asafoetida
  • 1Tsp Of Mustard Seeds
  • 1Tsp of Urad dal
  • Few Curry Leaves

How To
  • Boil the Potatoes in water for three or four minutes or pressure cook for two whistles. Run through cold water and peel the skin.
  • Prick the potatoes with fork lightly.Add salt,chilli powder,turmeric powder mix well and keep aside for an hour.
  • Heat oil in a pan crackle mustard seeds,urad dal,asafoetida and add the potatoes.shallow fry them till goden brown.serve as an accompaniment for any soth indian gray and steaming hot rice.

Those are some nicely evenly roasted baby potatoes. Nice as a snack or even with hot rice and rasam.
