Potatoes the universal favorite vegetable is enjoyed in every form,shape and size.These pan fried baby potatoes are a perfect accompaniment for any other south indian gravies like sambar,rasam and some steaming hot rice!!
You will Need
- 350gms of Baby Potatoes
- 1/4Tsp of Turmeric Powder
- 1/2Tsp Of Chilli Powder
- Salt to Taste
- 4 Tbs of Oil
- A Pinch of Asafoetida
- 1Tsp Of Mustard Seeds
- 1Tsp of Urad dal
- Few Curry Leaves
- Boil the Potatoes in water for three or four minutes or pressure cook for two whistles. Run through cold water and peel the skin.
- Prick the potatoes with fork lightly.Add salt,chilli powder,turmeric powder mix well and keep aside for an hour.
- Heat oil in a pan crackle mustard seeds,urad dal,asafoetida and add the potatoes.shallow fry them till goden brown.serve as an accompaniment for any soth indian gray and steaming hot rice.
