Sweet Mango Pickle/Gujarathi Pickles

                                                                    This sweet mango pickle is a very tasty sweet and sour pickle made with small chunky pieces of mango.I got introduced to this kind of sweet pickle through my Gujarathi friend from school days.She used to bring these sweet and sour pickle to school along with her Teplas and i used to take my sambar sadam  with   vegetable,invariably we used to grab each others tiffin box and enjoy the food!!!!
My kids are also fond of these sweet and sour pickle, so i make it often and enjoy it with some hot methi teplas and palak rotis.




You will Need
  • One Mango 
  • One tbs of Oil
  • One tsp Mustard seeds
  • Half tsp Turmeric powder
  • Salt to taste
  • One tsp Chilli powder
  • Half cup Sugar
  • Corinader and Cumin powder

1.Dry roast one tsp corinader seeds and one tsp cumin seeds and powder and keep aside.Chop the magoes in to small cubes after peeling off the skin of the mango.
Heat Oil in a pan and crackle mustard seeds add the chopped mango pieces saute for a minute and then add salt and turmeric powder mix well,cover and cook until the magoes are soft.
 2.Do not add water while cooking the mangoes.once the mango pieces are soft add chilli powder and sugar and mix well.
 3.The sugar will melt and become liquidy.Heat further until it becomes a thick syrup consistency.
 4.When it shrunk in volume add the roasted cumin and coriander powder and allow it to cool.

Store in a dry glass jar and enjoy with some teplas!!!!It stays good even without refrigeration for 15 days.
