Ragada Patties is a very popular street food in North India and western parts of India.It is one of my favourites.I am fond of almost all the chaat except a few like dal kachori and dahi puri.Whichever chaat is a little spicy and tasty i just love them.We mostly eat our chaat in Gangotri or Ajnabi these are the two places it is very good and tasty according to me.I always tell them to make mine a little more sweet than the usual(to add more sweet chutney)because i like the sweetness more in them.
Today i made this chaat because i was craving for some chaat and i really got bored of the usual cooking like sambar,rasam and curry.First i made the two chutneys and kept them ready so that it is easier while serving,then i made the Ragada which is prepared with dried white peas cooked with onions tomatoes and spices.Lastly made the patties with boiled potatoes and spices which is shallow fried.Just before serving all of these are assembled in a interesting way to get a spicy,tangy,sweet dish called "Ragada Patties".

How to
1.Soak the white peas overnight and pressure cook it until soft with salt.
2.Heat oil in a pan and fry onions till it starts to become brown.
3.Add ginger garlic paste and fry for a minute.
4.Add turmeric,chilli,cumin,coriander and garam masala powders and mix well.
5.Add chopped tomatoes,salt and fry until mushy
6.Add the boiled peas and some water and allow it to boil for 3-4 minutes.Mash some peas and add to the dal so that it binds well.
7.Check for salt and spice and add some if necessary and add chopped coriander leaves.
8.For making the patties add salt,turmeric,chilli,roasted cumin,garam masala,chaat masala powder and bread crumbs to mashed potatoes and mix well.

- One cup Dried white peas
- One Large Onion
- One Large Tomato
- One tsp Ginger Garlic paste
- A pinch of Tumeric powder
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/2 tsp Red Chilli powder
- 1 tsp Garam Masala powder
- One tbs Chopped Coriander Leaves
- Oil
(For the Patties)
- 4 Boiled Potatoes
- Salt to taste
- 1/2 tsp Chilli powder
- 1 tsp Garam masala powder
- 1/2 tsp Chaat masala powder
- 2-3 tbs Bread crumbs
For Garnishing(as required)
- Green Chutney
- Tamarind sweet chutney
- Chopped Onions
- Chopped Tomatoes
- Chopped Coriander Leaves
- Sev
- Lemon wedges

10.Heat a tawa sprinkle oil and fry the patties till golden brown on both sides.
Now it is time for arranging the ragda and the patties.Place one or two patties in a wide plate por the peas gravy around it,sprinkle some chopped onions,tomatoes,chopped coriander leaves,sev,chaat masala powders and drizzle the two chutneys as you like and enjoy the chaat when it is warm.
Notes- Adjsust the spice level according to your taste.
- Serve when the ragda is still warm or heat up the ragda when you serve.
- Sprinkle some lemon juice on top of the chaat if you prefer.
- Some people add some curd while serving you can if you prefer.
