We have Onam coming up in a few days and i thought let me post an Onam recipe.It is a very simple dish with coconut milk flavour.Addition of those beans adds a little protein to the dish.You can use either white or red pumpkin or even both but the procedure remains the same.

1.Chop the pumkin in to dices and keep it aside.

- 200 gms of White or Red pumpkin
- Handfull of Red Karamani
- Coconut Milk from 1/4 Coconut
- 1-2 Green Chillies
- Few Curry Leaves
- Few Drops Coconut oil
- Salt to taste
How to
1.Chop the pumkin in to dices and keep it aside.
2.Soak the Karamani for 2 hours and pressure cook for 3 whistles.(cook it just right so that it does not get mushy.)drain excess water after cooking as it will change the colour of the dish.
3.Grind the coconut scrapings with water and extract the milk three times.Boil the pumpkin in the thin coconut milk.(second and third time extracted)
4.Once the pumpkin in cooked(do not make it mushy)Add the boiled karamani and salt.
5.Add the thick coconut milk and before it starts boiling switch off the stove.
6.Tear few curry leaves and add on top and drizzle coconut oil.
Enjoy the Olan with hot rice or as an accomapaniment for sambar etc.
Notes
- Cook the pumpkin and the beans correctly and not very mushy.
- Cooking the vegetable in thin coconut milk enhances the flavour so extract the milk three times and use it.
- Give some resting time to the dish as it will thicken a bit.
