Eggless Tutti Frutti Cake

                                                                I have been trying out baking recipes slowly one by one.I thought i will make Plum cake for christmas but this tutti frutti cake is a long pending one and my kids preferred this one so i thought let me do this.I did a little bit of running around for tutti frutti in the morning it was not available in most of the stores(may be christmas time)finally i found it in nuts and spices.It was a good experience baking after a long time!!!!

You will Need
  • One and half cup All Purpose Flour
  • One cup Yogurt
  • 3/4 cup Sugar
  • One and half tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1/3 Cup Butter or Oil
  • 1/3 cup Tutti Frutti
  • One tsp Vanilla Essence
  • Baking spray
How to
1.Preheat the oven at 190 degrees.Seive the flour with baking powder and baking soda and vanilla essence(if it is a powder).
2.Mix the tutti frutti in the flour so that they get coated well and not stick  to each other.
3.Take the baking tray and spray with the baking spray or coat with butter or oil and sprinkle some flour on it.

 4.Whisk the curd with sugar until the sugar melts.add butter at room temperature (if you are using oil add at this stage) and whisk.
 5.Add the flour to the above wet ingredients and fold gently.
6.Pour it in to the baking tray.

 7.Bake it for 40-45 minutes at 190 degrees have a watch after 30 minutes each oven is different so the baking time might be different.Insert a tooth pic in the centre and check if it comes out clean.
 8.After ten minutes take it out and cool it on a wire rack.
Slice when it really cools down and enjoy with tea or coffee!!!!!!

Notes
  • You can use a different kind of mould for Baking if you prefer.
  • You can even add some chopped cashew nuts and raisins in addition to the tutti frutti.
  • Slice it only after it cools down otherwise it will break.
