Carrot Rice/Spicy Carrot Rice

                                                                              Carrot rice is not something that everyone makes often!! I do not make it often either, but when you need a variety or something for your lunch box this rice recipe comes out. My recipe for carrot rice is a little spicy version, but you can make it mild without grinding the masalas for a party with many dishes.If you are making it as a single dish might as well make it spicy and tasty and have it with raita and chips.
                                     
 
 

You will Need
  • One cup Cooked Rice
  • One big Onion
  • Two Carrots
  • Two Green chillies
  • One sprig of Curry leaves
  • Few Coriander leaves
  • A pinch of Turmeric powder
  • Salt to taste
  • 1/2 tsp Sugar
  • Lemon juice
  • A handful of Roasted Peanuts
  • Four tbs of Ghee
To Roast and Powder
  • Three Red Chillies
  • 1/2 tsp Khus khus
  • Two Cardamom
  • Four Cloves
  • One inch Cinnamon
  • One tsp Channa Dal

How to
Cook the rice, cool and sprinkle a little ghee and let them stay separate grains.Slice the onions and slice or shredd the carrots.
1.Heat one tsp ghee and roast all the ingredients given under roast and powder until light brown.remove and allow it to cool aside.
 2.In the same pan roast the peanuts either whole or skinned to make it crisp.
 3.Heat one two tbs of ghee and crackle mustard seeds.
 4.Add sliced onion.green chilli and currly leaves.Add turmeric powder and fry till translucent.
5.Mean while powder the roasted ingredients in the mixer.

6.Once the onions are fried add finely chopped or shredded carrot,salt to it and cook till it becomes soft.You can even cover and cook for two minutes.
 7.Add chopped coriander leaves and switch off the stove mix the coriander leaves with the carrot.
8.Mix the cooked and cooled rice,the carrot mixture and the spice powder.
 9.Mix well add some lemon juice and sprinkle sugar and mix further.

Enjoy the rice with some raita and chips!!!!!
