Vendakkai/Lady's Finger More Kuzhambu

                                                                  More Kozhambu or Kuzhambu is a very simple, yogurt based gravy made regularly in Tamil Homes.It is an important dish is any festival menu and wedding menus. Vendakkai or Lady's Finger More Kuzhambu is the Tastiest of all the More kuzhambu because we fry the lady's finger till crisp making it tastier than the other vegetables.
My Mother in law makes so many types of More kuzhambu since she is from Thirunelveli district.I have learnt a few of them and posted it too like Maampazha More kuzhambu,More Charu etc and a few will follow soon.My mother makes only one type of More kuzhambu.Paruppu usili or Coconut Thogayal is the best combination for this More kuzhambu.




You will Need

  • 10 Lady's Fingers                                                
  • One cup Sour Curd
  • 1/2 tsp Cumin seeds
  • 1/2 tsp Coriander seeds
  • 1/2 tsp Raw Rice
  • 1/2 tsp Tur dhal
  • 1/2 tsp Channa dal
  • 2tbs Scraped Coconut
  • A pinch of Turmeric powder
  • 1/2 tsp Coriander Leaves
  • One tsp Oil
  • One tsp Mustard Seeds
  • One Red Chilli
  • Salt to taste



How to
1.Soak Coriander seeds,tur dhal,channa dhal,rice for half an hour.
2.Chop the lady's finger in to one inch length pieces.
 3.Heat oil in a pan crackle mustard seeds.add the torn red chilli.
 4.Add the chopped lady's finger,salt and turmeric powder and fry in slow flame.
5.Meanwhile transfer the soaked ingredients to a small jar in the mixer add scraped coconut,cumin seeds green chilli add some water and grind to a fine paste.

 6.Add Curds to the paste and just whisk it for few seconds in the mixer itself.
 7.Fry the lady's finger till crunchy.
 8.Add the ground paste and curd mixture to the lady's finger.check for salt.
 9.Bring it to boil and stop the flame.It should not boil.Garnish with coriander leaves.
Enjoy with some hot rice and Paruppu usili!!!
Notes

  • You can grind only Channa dal and omit tur dhal.
  • You can make this kozhambu with other vegetables like white pumpkin,chow chow etc.
