Sambar Powder/Sambar podi/Kuzhambu podi

Sambar powder is a very important powder, masala or podi stored in a Tamil house. It is a basic masala powder used to make our staple sambar, rasam and vathakuzhambu. There are powders seperate for rasam and vathakuzhambu with slight variations but still we can manage with the sambar powder quiet well.
I am posting this recipe to make at home in a small quantity.Traditionally all the ingredients are sun dried and powdered in a flour mill in large quantities and stored for a couple of months. But now the families are small and the need is also less so this quantity can be made at home in a mixer and used for a month.

You will Need

  • One cup Red chillies
  • Two cups Coriander seeds
  • One tsp Turmeric powder
  • Two tbs Tur dhal
  • One tbs Channa dal
  • One tsp Fenugreek seeds
How to

  • Dry Roast all the ingredients(except turmeric powder) one by one in a pan in slow flame and keep it to cool.Powder in a dry mixer and sieve it.Then sieve it again to get a fine powder.Spread it on a plate to cool.store in dry glass bottle and use dry spoon for use always.
  • If you find the sambar podi to be spicy with the above measurements increase the amount of dals next time when you grind.

Hello Uma

Thanks for the recipe! One question, is it cups of Tur dal/chana dal or tablespoons as mentioned. It feels like tablespoons is too less.

Hi vandana the measurements are right both the dals are actually only for binding and the quantity is small so it is sufficient.try and let me know.
