Vegetable Pulao

                                                                        People make pulao in so many different ways and there are many recipes and versions to it.I also make it in three or four different ways depending on the time and availability of ingredients at home.Today i made some Channa masala so to go with it i made a mild pulao which looks more restaurant style one.
It is very simple and easy to make and requires very few ingredients.I cook the basmati rice separately and mix it with the vegetables in most of my pulao recipes.I feel the colour and taste is better this way when cooked seperate.





It is definitely not a one pot meal because it is very mild and needs some curry or a dal as an accompaniment.It can sure be a part of a party dinner menu.Now coming to the recipe...

You will Need

  • One cup Basmati Rice
  • One Carrot
  • Four to six Beans
  • Quarter Cup Peas
  • Two Tbs of Oil or Ghee
  • One slit Green chilli
  • Four Cloves
  • Two Cardamom
  • One Piece of Cinnamon 
  • One tsp of Cumin Seeds
  • Few Mint leaves
  • Salt to taste

How to

  • Cut the vegetables in diamond shape like they do in restaurants.Put them in boiling water and allow it to boil till they are crisp and half cooked.Strain and run through cold water so that it retains colour.
  • Soak the Basmati Rice for half an hour.Cook it in the electric rice cooker with 1:13/4(ratio) cup water.Spread it on a plate and mix one tsp of oil or ghee on it and allow it to cool so that it does not stick to each other.
  • Heat Oil in a pan and temper with cloves,cinnamon,green chilli,cardamom,torn mint leaves and cumin seeds.Add the vegetables and salt.Saute for few minutes.Now mix the rice and the vegetable mixture.
  • Enjoy the Fragrant pulao with a dal or a subzi!



  • You can add some fried onions to improve taste.
  • You can some corn kennels along with other vegetables.
  • Using ghee gives very good flavour and aroma.
