yam senakizhangu roast

Ingredients

Yam or senaikizhangu
500gms
Salt
To taste
Turmeric powder
1/4tsp
Chilli powder
1tsp
Asafoetida
1/6tsp
Curry leaves
few
Oil
3tbs
Mustard seeds
1tsp
Urad dal
1tsp

Method
1.Dice the yam in to small blocks.
2.Heat few spoons of  oil in a pan and add mustard seeds and urad dhal and when it becomes brown.
3.Add the cut yam and add all the powders and close and cook for 5 minutes.by then yam would have got cooked and now fry it keeping it open till it becomes crisp.
4.It is quiet easy and an accompaniment for sambhar rice,rasam and curd rice.

spicy corn capsicum sandwich

This is a perfect after school snack for kids and is quiet easy to make.




Ingredients

  • Ten Bread slices
  • Two Onions
  • One Tomato
  • One small Capsicum
  • Half a cup corn kennels
  • Salt to taste
  • Half a tsp chilli Powder
  • Half a tsp of Garam masala powder
  • Two Cheese cubes
  • Butter or oil

Method
Fry onions in a pan with some oil or butter.add other vegetables and fry further.
Add all the powders and cheese cubes and fry till it melts.
Cool it and spread it on bread slices along with some butter or cheese spread and toast it on the sandwich toaster(grill it).

milagu rasam(with garlic)


Ingrdients

  • Tamarind   marble sized ball
  • pepper   1tbs
  • Turdhal    1tbs
  • Red chillies  3
  • Curry leaves  few
  • Garlic     20 pods
  • Ghee
  • Mustard seeds
  • Salt


Method
1.Soak tamarind in hot water for an hour and extract watery juice 3 times.
2.Roast pepper,turdhal,red chillies,and curry leaves in little ghee and powder it.
3.Boil the tamarind water with garlic and salt and when the garlic is cooked add the powder and add some more water and season it with mustard seeds in ghee.

Suggestions
Mash up some hot rice with this rasam and ghee it tastes heavenly especially when you have fever.
You can make it without garlic too.

Macroni Magic



You will Need
Macaroni   200gms
Onions       2
Tomatoes   2
Capsicum   1
Peas           1/2cup
Corn kennels  1/2cup
Salt as required
Oil  or butter
Chilli powder

How do you make it
1.Chop the vegetables like shown in the picture.


2.Boil macaroni and in the last few minutes add peas and corn also to be boiled.
3.Fry the other vegetables in oil or butter.add salt and chili powder and add the macaroni too.
4.You can make some variations like adding cheese or chili flakes instead of powder and tomato puree etc.i   make this according to my kids taste.(Indian taste)

Beet root curry

I make beet root curries in tww different ways.One with coconut and other with potato which sometimes even goes with chapati because it is a little spicy and with potato of course.The only difference is the coconut.If you want to avoid the coconut you can dice a potato and do it the same way.have a look at both the pictures.







Ingredients

  • Beet root                                 1/2kg
  • Salt
  • Chilli powder                            1tsp
  • Turmeric powder                      1/2 tsp
  • Coconut scrapings                    2tbs
  • Oil                                           1tbs


Seasoning

  • Mustard seeds   1tsp
  • Urad Dal           1tsp
  • Red chillie           2
  • Asafoetida          a pinch



Method
1.Heat a pan and add oil and mustard seeds.when it crackles add urad Dal,red chillies and asafoetida.
2.when the dhal becomes slightly brown add the finely diced beet root.
3.Add salt,turmeric powder and chilli powder and allow it to cook for 10 minutes with a little water sprinkled on it.
4.Close with a lid and cook for ten minutes.
5.when the beet root becomes soft add coconut for garnishing.
6.Serve along with sambhar,rasam and rice.
