Ras Malai/Easy Sweet Recipes

I have two tins of Rasgullas in my pantry now.I thought I will make Few Gullas into Ras Malai. My husband's cousins are coming over for lunch and I am going to make it as their dessert. .It is basically Ras gullas soaked in Rabri.you can check out recipe for rasgullas here.I really like this sweet because it is mildly sweet and not deep fried (not too much ghee or oil content). It is a perfect dessert after a heavy meal. You can indulge in it without any guilt. It tastes best when it is chilled. My kids are not very fond of this sweet, let me see if they will be gulping a few!!!!!

You will Need
  • Ten Rasagullas
  • One litre of Milk
  • One third cup Sugar
  • Few Pistachios
  • Few strands of Saffron
  • Few Almonds.
  • One tbs of Ghee

How to
  • Soak few strands of saffron in two tbs of hot milk. Boil one litre of milk in a thick pan.Keep heating it in medium or low flame till it reduces to three fourth of the quantity. If you want it thicker, heat it until it reaches half the quantity.Add the soaked saffron strands.Add sugar and heat for few minutes more.

  • Roast the slivered nuts in a tsp of ghee and add it to the milk. You can add a little less or more nuts according to your preference.

  • Flatten the gullas with a spoon. squeeze the sugar syrup out and drop the ras gullas  into the reduced milk.Allow it to rest for an hour and until it reaches room temperature.Refrigerate and serve chilled.

  • Once it comes to room temperature refrigerate for few hours and serve chilled.
