Easy Potato Fry

This is the most favourite curry(vegetable dish) of mine. From childhood i used to love it especially when my mom makes shallots vathakozhambu and this curry. It really comes in handy when you run out of green vegetables.
Today i madee brinjal curry and one of my kids does not like brinjal so i had to make a quick curry for her and i decided to make this "easy potato fry".It is really simple and gets done in few minutes and it is very tasty. It is a great side for any south Indian gravy.

You Will Need(serves 2-3)

  • Four Potatoes
  • Two tbs of Oil
  • Half a tsp Mustard seeds
  • Half a tsp Urad dal
  • Half a tsp Chilli Powder
  • A pinch of Turmeric powder
  • Salt taste

How to

  • Wash and peel the skin of the potatoes and dice them.
  •  Put them in water until you cook else it might darken

  • Heat a thick bottomed pan crackle mustard seeds and throw in the urad dal and fry until golden brown.

  • Put the diced potatoes add salt, turmeric and chilli powder stir well and cook covered for two minutes.

  • Once the potatoes are cooked keep the stove in medium flame and continue to fry them.If you wish you can add a little more oil to get a crispy curry.

Enjoy it as an accompaniment for any south Indian gravy with some hot rice and ghee
