Eggless Date and Walnut Cake

I love dates ever since my childhood and I make sure my kids eat a few of them often because of their nutritive value and its richness in Iron and Pottassium.
This is a very simple and basic recipe I found in Pratibha's blog.It is a very good recipe for beginners. It came out well and tasted great. Thanks to Pratibha! The date and walnut combo is too tasty !

You will Need
  • One Cup Flour
  • 20 seedless Dates
  • One tsp Baking Powder
  • One tsp Baking Soda
  • One third cup Oil or Butter
  • 1/4 cup Chopped Walnuts
  • 3/4 cup Milk
  • 3/4cup Sugar
  • Few Tbs of Nutella
How To
  • Soak the seedless dates in hot water for half an hour.Remove the water and Grind it into a smooth paste with sugar and some milk. You can use rest of the milk later.
  • Transfer it in to a wide bowl and Add the oil or butter(at room temperature) to the ground paste and mix well.
  • Seive the flour with baking powder and baking soda for even mixing.
  • Dust the walnuts with some flour(to avoid sticking).Grease the baking tray with some oil or butter.
  • Dust the baking tray with some flour too.
  • Slowly add the paste to the flour and fold in gently.Add few tbs of Nutella if you wish to.
  • If the mixture is too thick add some milk and mix gently.Add the chopped walnuts at this stage.
  • Pour it into the greased pan and bake it for 30-35 minutes at 180 degrees Celsius.
  • Insert a tooth pick at the center and see if it comes out clean.
  • Cut into desired shapes and decorate it as you wish.

Notes
  • My daughters used Nutella to decorate on top.
  • Have a watch on the cake after 30 minutes while baking.
