Badam cake or burfi is a very common sweet in the Tamil household or south indian household during diwali time.My grandmom used to call it as cake and she used to make it when we used to visit her during holidays.From that time i was fond of this sweet.
This is an all time favourite sweet in my house.I make this burfi or Badam kheer often since my daughters do not eat any nuts especially "badam".It is quiet simple to make.You just have to get the right consistency to pour in to the plate to make in to burfi's.
You will Need
- One cup Badam Paste
- One cup Sugar
- 1/4 cup Ghee
- Few Strands of Saffron
1.Soak the Badam for few hours or soak it in hot water for half an hour and peel off the skin and grind to a sooth paste.
2.Heat sugar and little water(just for the sugar to immerse)in a non stick pan.
3.Once the sugar dissolves allow it to boil for few minutes to get one string consistency.But do not bother too much about the consistency it is ok little here and there.Add the ground paste,saffron strands and a little ghee and allow it to boil.
7.When you see lather kind of consistency pour it in to the greased plate.
Enjoy the burfis when it warm it tastes great!!!!!!!It was firm outside and soft inside and my daughter love this consistency!!!.
- It t takes about 20-25 minutes to get to the cocsistency.
- Stir continously otherwise it will stick at the bottom and become brown.
- Always cook in medium or low flame.
- After pouring in to the plate if it is still gooey heat it again and pour in to the plate.
