Lady's finger fry/Vendakkai Curry

                                                                    Lady's finger is called Vendakkai in Tamil.It is a very common vegetable in Indian homes.We make Vendakkai sambar,curry,north Indian syle Bhindi fry,Dahi Bhindi etc but the most common way i make is the vendakkai curry/poriyal to go with the south indian gravies like sambar,vatha kuzhambu or rasam.
It has lot of Health benfits and most of us would have grown up listening to our mom saying Vendakkai is very good for brain development and we would do very good math if we eat lot of this simple vegetable.It cooks easily and easily digestible aslo.It can be grown in our home also.




You will Need
1/2 kg Lady's finger
1/4 tsp Turmeric powder
1/2 tsp Red Chilli powder
Salt to taste
2 Tbs Oil(coconut oil)
1 tsp Mustard seeds
1 tsp Urad dal


How to
1.Wash the lady's finger in running water.Allow the water to drain completely
2.Spread them on kitchen towel or tissue papers to let them dry completely.This is to prevent the stickyness while cooking the lady's finger.If there is water then the curry will become gooey!!!!Then chop the lady's finger in to half an inch pieces.
3.Heat oil a non stick pan and crackle mustard seeds,add urad dal and allow it to brown.Add the chopped lady's finger and give it a stir.
4.Close it with a lid and allow it to cook for 3-4 minutes.
5.Add salt,turmeric and chilli powder and stir well.
6.Roast the vegetable until crisp and add half tsp of sugar.

Enjoy it hot as an accompaniment for all south indian gravies like rasam,sambar or poricha kozhambu.


Notes

  • You can add a chopped onion to the curry for a better taste.
  • You can use curry powder instead of red chilli powder for a different taste.
  • You can make the curry powder by roasting channa dal,coriander seeds,red chillies and dried coconut and powdering it.
