Kulcha/Kulcha Recipe

KULCHA is one of our favorite breads when we eat north Indian food outside. Some times when we are really craving for food we order different types of kulchas like paneer kulcha, onion kulcha or mint kulcha butwhen it is normal we go in for the normal ones.I do make Nans at home often now started making these kulchas too.It is quiet easy to make if you plan a little ahead. It is very popular in Amritsar and punjab and usually served with chole!!!

You will Need(To make 7-8 Kulchas)

  • 2 cups Maida or Flour
  • 1 tsp Sugar
  • 1/3 cup Curd
  • 1/4 tsp Baking soda
  • 1/4 tsp Baking powder
  • Salt to tast
  • Oil to knead
  • Butter to spread
  • 1 tbs Black Sesame seeds
  • 2 Tbs Chopped Coriander Leaves

How to
1.Gather maida, salt, baking soda, baking powder in a wide bowl.Make a well in the centre and add curds.
2.Slowly knead in to a soft dough.Apply some oil and knead further.(if the curds is not enough add some water or milk to knead the dough)
3.Knead it for 5-6 minutes till you get a smooth texture and cover it with a wet cloth and leave it for 3-4 hours.
4.After the resting time pull out small portions and make it in to small balls.
5.Roll out in to slightly thick rotis using flour to dust.
6.Sprinkle some sesame seeds and chopped coriander leaves on the rolling surface.
7.Place the rolled roti on top and roll it once so that the seeds and coriander sticks to the roti.apply water on the empty side.
8.place the water applied side on the pan so that it sticks to the pan.
9.Cover and cook for a minute in high flame.
10.Just turn the tawa on the flame and cook on all sides by rotating the tawa and till brown spots appear on the roti or kulcha. If the kulcha falls off the tawa just show it on the flame no problems.
11.apply or spread some butter on the kulcha.
Enjoy the hot Kulcha with some paneer subzi and it tastes awesome!!!!!

Notes

  • Enjoy the kulchas when it is hot.
  • Serve the kulchas in Bamboo baskets as it will become soggy when you keep it in the hot casserole.
  • Sprinkling sesame seeds and coriander is optional it adds flavour and taste though.
