Paneer Subz Shahi Korma/Paneer Vegetable Shahi Korma

                                                         Shahi(means Royal),yes,Shahi korma is a rich nawabi gravy with almonds,cashews and fresh cream.It is a mild and slightly sweet gravy.It goes well with Masala pooris,Nans,Kulchas and any pulao rice.
I am not a big fan of white gravy but when it is combined with a spicy bread or a pulao it is fine.My daughter loves white gravies a lot and whenever we go out for dinner we have a small fight over it becuase other than her no one eats that dish and finally we order a white gravy dish for her.


You will Need(serves 3-4 people)
  • 100 gms of Paneer Cubes
  • 200 gms Mixed Vegetables
  • 2 Diced Onions
  • 1 Green chilli
  • 2-3 pods of Garlic
  • 1 small piece of Ginger
  • 1/2 tsp Red Chilli powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Garam masala powder
  • Salt to taste
  • 2-3 tbs Ghee or Butter
  • 1 tsp Sugar(optional)
  • 1 tbs chopped Coriander leaves
To Soak and Grind
  • 7-8 Cashewnuts
  • 7-8 Almonds
  • 1 tsp Poppy Seeds
To Temper
  • 1 Bay Leaf
  • 2 Cardamoms
  • 4 Cloves
  • 1 Small piece Cinnamon stick
  • 1/2 tsp Shahi Jeera


How to
1.Dice the vegetables and boil them till crisp drain and keep aside.
 2.Saute the paneer cubes till lightly brown in one tsp of butter.
 3.In the same pan add the diced onions and suate them for few minutes and allow it to cool.
 4.Soak the almonds,cashew and poppy seeds in hot water for 10 mins and peel the skin of the almonds.
 5.When the onions gets cooled add one green chilli,2-3 pods of garlic,and a small piece of ginger and the soaked almond,cashew and poppy seeds in a mixer.
 6.Add a little water and grind to a smooth paste.
 7.Heat butter in a pan temper shahi jeera,cloves cardamom,cinnamon and bay leaf.
 8.Add the ground paste fry for two minutes and then add salt, sugar,cumin,masala and chilli powder.
 9.Fry for two more minutes till the masalas combine.
 10.Add the boiled vegetables add some water and allow it to thicken.
 11.Add the paneer cubes and creme and mix well
 12.Garnish with some coriander leaves.
Enjoy the gravy with some masala pooris or rotis,nans or kulchas or any pulao!!!!

Notes

  • If you do not want to use cream you can add some thick yogurt.
  • You can skip the sugar if you do not want the sweetness in the gravy.
